Summer cooking with herbs
I have planted my little herb garden in pots this year outside my kitchen door and I plan on experimenting more with cooking using herbs. So last night I tried a recipe using my thyme. I was so pleased at how easy it was and how delicious it turned out.
Here is a simplified version of the recipe: 4 Chicken breasts (I used boneless, skin removed) In a saucepan whisk together the following ingredients and on low heat let it simmer for about 3 minutes, stirring it from time to time. one half cup of apple jelly 1 tbsp grated fresh ginger (important that it is fresh) 1 tbsp finely chopped thyme 2 tbsp low salt soy sauce Brush both sides of the chicken breasts with oil and then season with salt and pepper. I used freshly ground pepper corns as well as a grinder for sea salt. Place your chicken on the grill and cook it on one side for about 3 minutes and then brush the glaze on the chicken. Flip and glaze, let cook until done. Careful not to overcook your chicken. Save some of your glaze and then re-glaze just before serving. Let it stand for about 5 minutes. I served this with a spinach salad and my two teens could not get enough of it. Loved it. I am going to try this on ribs next time. The combination of the ginger, tyme and apple jelly is wonderful.
